Joy of Vegetables: Where Gardening meets Nutrition

This hands-on course will explore vegetables from the ground to our plates and promote a symbiosis between healthy plants and healthy people. We will connect science standards with real world applications whether in a school playground,a protected rooftop, hanging from a chain-link fence or in classroom window box. Participants will learn to get a headstart on the growing season, to purchase inexpensive seedlings and to make financially sustainable farm projects. Teachers will plant vegetable seeds, transplant herb seedlings, investigate plant structure, define botanical functions, conduct scientific experiments and produce tasty, unique veggie dishes. Additionally, we will explore ways to address our nation’s growing obesity epidemic through promotion of physically activity and consuming fresh produce.
